St Patrick’s Day chicken & pepper whirls

irish flagI’m always looking for recipes that I can use on our fasting days for the 5:2 diet. Here’s a really easy one I adapted myself and worked out calories for. To push the calories further down so you can have another meal add more veg e.g., green beans or sugarsnap peas, and less pasta. And why is it a St Patrick’s Day recipe? Check out the colours – green & orange peppers and white chicken & pasta!

15-minute recipe

5:2 diet, fasting diet,  490 calories each

INGREDIENTS

180 g pasta farfalle (‘whirls’)

2 medium boneless chicken breasts, cut into strips

1 medium orange pepper, sliced

1 medium green pepper, sliced

1 medium onion, sliced

Tbsp olive oil

Salt & pepper

METHOD

Fry chicken with peppers and onion till golden, serve with pasta. Give more of the pasta to the man (he can have more calories!)
